Ingredients

Burritos

  • 6 large flour tortillas
  • 1 lb ground beef or shredded chicken
  • 1 tbsp oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • 1 cup cooked rice
  • 1 cup shredded cheddar or Mexican-blend cheese

Sauce

  • 1 can (10 oz / 280 g) enchilada sauce or
  • 1 cup tomato sauce
  • ½ cup beef or chicken broth
  • 1 tsp chili powder
  • ½ tsp cumin

Topping

  • Extra shredded cheese
  • Sour cream, lettuce, tomatoes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Heat oil in a skillet. Cook onion and garlic until soft. Add meat and brown.
  3. Season with chili powder, cumin, paprika, salt, and pepper.
  4. Stir in cooked rice and ½ cup cheese.
  5. Fill tortillas, roll tightly, and place seam-side down in baking dish.
  6. Pour sauce evenly over burritos.
  7. Sprinkle remaining cheese on top.
  8. Bake 25–30 minutes until bubbly and melted.
  9. Serve hot with desired toppings.
