Ingredients

  • 2 cups all-purpose flour
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional)

Wet Batter

  • 1½ cups buttermilk
  • 1 large egg

Instructions

  1. In a bowl, mix flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
  2. In another bowl, whisk buttermilk and egg.
  3. Dip chicken pieces into the buttermilk mixture, then coat well in the seasoned flour.
  4. For extra crunch, dip again in buttermilk and flour.
  5. Fry in 350°F (175°C) oil for 12–15 minutes until golden and cooked through.
  6. Drain on a rack and rest 5 minutes before serving.

🔥 Tips for extra crispy chicken

  • Let coated chicken rest 10 minutes before frying
  • Add 1 tbsp cornstarch to flour
  • Season chicken lightly before battering
