🇭🇺 Cottage Cheese Noodles

Túrós Csusza

Ingredients

  • 12 oz (350 g) wide egg noodles
  • 10 oz (300 g) Hungarian-style cottage cheese (or farmer cheese), crumbled
  • 4 oz (120 g) bacon, diced
  • 2–3 tbsp bacon fat or butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Sour cream (optional, for serving)

Instructions

  1. Cook noodles in well-salted water until al dente. Drain, reserving a little pasta water.
  2. In a skillet, cook bacon until crispy. Remove bacon and set aside; keep the fat.
  3. Add cooked noodles to the skillet with the bacon fat (or butter). Toss to coat.
  4. Add cottage cheese and gently mix (add a splash of pasta water if needed).
  5. Season with salt and plenty of black pepper.
  6. Top with crispy bacon and serve immediately, with sour cream if desired.

Tips

  • Use farmer cheese for the most authentic taste
  • Traditionally very peppery
