🇭🇺 Cottage Cheese Noodles
Túrós Csusza
Ingredients
- 12 oz (350 g) wide egg noodles
- 10 oz (300 g) Hungarian-style cottage cheese (or farmer cheese), crumbled
- 4 oz (120 g) bacon, diced
- 2–3 tbsp bacon fat or butter
- Salt, to taste
- Freshly ground black pepper, to taste
- Sour cream (optional, for serving)
Instructions
- Cook noodles in well-salted water until al dente. Drain, reserving a little pasta water.
- In a skillet, cook bacon until crispy. Remove bacon and set aside; keep the fat.
- Add cooked noodles to the skillet with the bacon fat (or butter). Toss to coat.
- Add cottage cheese and gently mix (add a splash of pasta water if needed).
- Season with salt and plenty of black pepper.
- Top with crispy bacon and serve immediately, with sour cream if desired.
Tips
- Use farmer cheese for the most authentic taste
- Traditionally very peppery
