📝 Ingredients

🍰 Chocolate Sponge Cake

  • 6 large eggs, separated
  • ¾ cup (150 g) sugar
  • ½ cup (60 g) all-purpose flour
  • ¼ cup (30 g) cocoa powder
  • 1 teaspoon vanilla
  • Pinch of salt

🍫 Chocolate Mousse Filling

  • 200 g (7 oz) dark chocolate (60–70%), chopped
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • Optional: 1 tablespoon rum or brandy

🍫 Chocolate Glaze

  • 150 g (5 oz) dark chocolate
  • ½ cup (120 ml) heavy cream
  • 1 tablespoon butter

👩‍🍳 Instructions

1️⃣ Chocolate Sponge

  1. Preheat oven to 180°C / 350°F.
  2. Line a rectangular baking pan.
  3. Beat egg whites with salt until soft peaks form.
  4. Gradually add half the sugar; beat until stiff.
  5. Beat yolks with remaining sugar and vanilla until pale.
  6. Fold yolks into whites gently.
  7. Sift flour and cocoa together; fold in carefully.
  8. Spread batter evenly and bake 18–20 minutes.
  9. Cool completely, then cut cake horizontally into two layers.

2️⃣ Chocolate Mousse

  1. Melt chocolate gently and let cool slightly.
  2. Whip cream with sugar until soft peaks form.
  3. Fold melted chocolate and vanilla (and rum if using) into whipped cream.

3️⃣ Assemble

  1. Place bottom sponge layer in pan.
  2. Spread mousse evenly over the cake.
  3. Top with second sponge layer and press gently.

4️⃣ Chocolate Glaze

  1. Heat cream until hot (not boiling).
  2. Pour over chopped chocolate and butter.
  3. Stir until smooth.
  4. Pour glaze over cake and smooth the top.

5️⃣ Chill & Serve

  • Refrigerate at least 4 hours, preferably overnight
  • Cut into neat rectangles with a warm knife

The cake is named after Rigó Jancsi, a famous Hungarian Roma violinist, who fell in love with a Belgian princess. This cake became a symbol of passion and indulgence.
