Ingredients
Sponge Cake Layers
- 6 large eggs, separated
- 1 cup sugar

- 1 cup powdered sugar
- 4 oz melted dark chocolate (cooled)

Instructions
1. Make the Sponge Layers
- Preheat oven to 350°F (175°C).
- Beat egg whites until stiff peaks form.
- In another bowl, beat egg yolks with sugar until pale and thick.
- Add vanilla, then fold in flour gently.
- Fold in the whipped egg whites carefully.
- Spread thin layers of batter onto lined baking sheets (you’ll make 6 thin layers).
- Bake each layer 5–7 minutes until lightly golden.
- Let cool completely.
2. Make the Chocolate Buttercream
- Beat butter until creamy.
- Add powdered sugar and beat until fluffy.
- Mix in melted, cooled chocolate and vanilla.
3. Assemble the Cake
- Layer the sponge sheets with chocolate buttercream between each one.
- Reserve a thin top layer for the caramel.
4. Make the Caramel Top
- Melt sugar in a pan until golden.
- Stir in butter.
- Quickly pour over the reserved sponge layer and spread evenly.
- Score into slices before the caramel hardens completely.
5. Finish
- Place the caramel-topped wedges on top of the cake.
- Chill before slicing.
