Ingredients
- 1 lb (450 g) yellow wax beans, trimmed & cut
- 1 onion, finely chopped
- 2 tbsp oil or butter
- 2 cloves garlic (optional)
- 1 tsp salt (adjust to taste)
- 1 tsp paprika
- 1 bay leaf (optional)
- 4 cups water or vegetable broth
For the roux (rántás):
- 2 tbsp oil or butter
- 2 tbsp flour
- 1 tsp paprika
- 1/2 cup sour cream
- 1–2 tbsp vinegar or lemon juice (for the classic tang)
Instructions
1. Cook the beans
- Sauté onion in 2 tbsp oil/butter until soft.
- Add garlic (optional), cook 30 sec.
- Stir in 1 tsp paprika.
- Add beans, salt, bay leaf, and enough water/broth to cover.
- Simmer 20–25 minutes until beans are tender.
2. Make the roux
- In a small pan, heat 2 tbsp oil/butter.
- Add flour; stir until lightly golden.
- Remove from heat, stir in 1 tsp paprika.
- Add a few spoonfuls of the hot bean liquid to loosen.
- Stir roux into the stew.
3. Add sour cream & vinegar
- Mix sour cream with a little hot liquid to temper.
- Stir into the stew.
- Add vinegar or lemon juice to taste.
4. Simmer
Cook 5 more minutes until thick and creamy.
Adjust salt, tang, and consistency.
