Ingredients

  • 1 lb (450 g) yellow wax beans, trimmed & cut
  • 1 onion, finely chopped
  • 2 tbsp oil or butter
  • 2 cloves garlic (optional)
  • 1 tsp salt (adjust to taste)
  • 1 tsp paprika
  • 1 bay leaf (optional)
  • 4 cups water or vegetable broth

For the roux (rántás):

  • 2 tbsp oil or butter
  • 2 tbsp flour
  • 1 tsp paprika
  • 1/2 cup sour cream
  • 1–2 tbsp vinegar or lemon juice (for the classic tang)

Instructions

1. Cook the beans

  1. Sauté onion in 2 tbsp oil/butter until soft.
  2. Add garlic (optional), cook 30 sec.
  3. Stir in 1 tsp paprika.
  4. Add beans, salt, bay leaf, and enough water/broth to cover.
  5. Simmer 20–25 minutes until beans are tender.

2. Make the roux

  1. In a small pan, heat 2 tbsp oil/butter.
  2. Add flour; stir until lightly golden.
  3. Remove from heat, stir in 1 tsp paprika.
  4. Add a few spoonfuls of the hot bean liquid to loosen.
  5. Stir roux into the stew.

3. Add sour cream & vinegar

  1. Mix sour cream with a little hot liquid to temper.
  2. Stir into the stew.
  3. Add vinegar or lemon juice to taste.

4. Simmer

Cook 5 more minutes until thick and creamy.
Adjust salt, tang, and consistency.
