Ingredients

  • 4 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 can (20 oz / 560 g) crushed pineapple, well drained
  • ½ cup shredded coconut (optional)

For the creamy pineapple topping:

  • 1 can (14 oz / 400 g) sweetened condensed milk
  • 1 cup heavy cream or whipping cream
  • ½ cup sour cream or Greek yogurt
  • ½ cup crushed pineapple (drained)
  • ½ cup shredded coconut
  • 1–2 tbsp pineapple juice (from the can)
  • 1 tsp vanilla

For the finishing:

  • Toasted coconut (optional but AMAZING)
  • Extra pineapple chunks for decoration
