Ingredients
For the Base
- 1 box strawberry cake mix
- Ingredients required on the box (usually eggs, oil, and water)
Cream Cheese Layer (the “earthquake” swirl)
- 8 oz (225g) cream cheese, softened
- ½ cup (115g) unsalted butter, melted
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups chopped fresh strawberries (or frozen, thawed & drained)
Extras
- 1 – 1½ cups sweetened shredded coconut (optional but classic in earthquake cakes)
- 1 cup white chocolate chips (optional but amazing)
