Ingredients
- 2½ lbs (1.2 kg) lamb shoulder or neck, trimmed and cut into chunks
- 2 tablespoons vegetable oil
- 2 onions, thinly sliced
- 3 carrots, sliced
- 2 tablespoons flour
- 2 cups (500 ml) beef or lamb stock
- 2 teaspoons Worcestershire sauce (optional, for richness)
- 1 teaspoon fresh thyme leaves (or ½ tsp dried)
- 2 bay leaves
- 2 lbs (900 g) potatoes, peeled and thinly sliced
- 2 tablespoons butter, melted
- Salt & freshly ground black pepper, to taste
