
Cheesy Baked Tortilla Casserole
Ingredients (serves 6–8)
- 8–10 flour or corn tortillas
- 1 lb (450 g) ground beef or chicken
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp cayenne, salt & pepper)
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 cup salsa or enchilada sauce
- 2 cups shredded cheddar or Mexican blend cheese
- ½ cup sour cream (optional, for layering)
- Optional toppings: chopped cilantro, sliced jalapeños, diced tomatoes, green onions
