Seafood

  • 1 lb imitation crab (or a mix of shrimp + crab)
  • 2 celery stalks, finely diced
  • 2–3 green onions, chopped
  • 1 tbsp fresh dill (optional but great)

Dressing (light)

  • 1/2 cup light mayo (or Greek yogurt)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp Old Bay or paprika
  • Salt & pepper to taste

Optional add-ins (healthy + tasty)

  • 1/2 cup diced cucumber
  • 1/4 cup diced red bell pepper
