👨‍🍳 Instructions:

  1. Prep the Steaks:
    Pat steaks dry with paper towels. Season generously on both sides with salt, pepper, and garlic powder if using.
  2. Sear:
    Heat a cast-iron skillet over high heat until it’s smoking hot. Add a small drizzle of oil.
    Sear the steaks for 2–3 minutes per side to build a deep, golden-brown crust.
  3. Baste with Flavor:
    Reduce the heat to medium. Add butter, smashed garlic, and herbs to the pan.
    Tilt the skillet slightly and spoon the melted butter over the steaks continuously for rich flavor.
  4. Cook to Temperature:
    • 125°F (52°C) = Rare
    • 130°F (54°C) = Medium-rare
    • 140°F (60°C) = Medium
      Use a meat thermometer for best accuracy.
  5. Rest & Serve:
    Let the steaks rest for 5 minutes before slicing. This keeps them juicy.
    Serve with mashed potatoes, roasted veggies, or a fresh green salad.
