- Prep the Steaks:
Pat steaks dry with paper towels. Season generously on both sides with salt, pepper, and garlic powder if using. - Sear:
Heat a cast-iron skillet over high heat until it’s smoking hot. Add a small drizzle of oil.
Sear the steaks for 2–3 minutes per side to build a deep, golden-brown crust. - Baste with Flavor:
Reduce the heat to medium. Add butter, smashed garlic, and herbs to the pan.
Tilt the skillet slightly and spoon the melted butter over the steaks continuously for rich flavor. - Cook to Temperature:
- 125°F (52°C) = Rare
- 130°F (54°C) = Medium-rare
- 140°F (60°C) = Medium
Use a meat thermometer for best accuracy.
- Rest & Serve:
Let the steaks rest for 5 minutes before slicing. This keeps them juicy.
Serve with mashed potatoes, roasted veggies, or a fresh green salad.
