
👩🍳 Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a 9×13 baking dish.
- In a large bowl, toss potato cubes with 2 tbsp olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Place potatoes in the baking dish and roast for 25 minutes, stirring once halfway through.
- Meanwhile, season chicken with salt, pepper, and a little paprika.
- After 25 minutes, place the seasoned chicken pieces on top of the partially roasted potatoes.
- Drizzle with remaining 1 tbsp olive oil. Bake for another 25–30 minutes, or until chicken is cooked through and potatoes are golden.
- (Optional) Sprinkle with cheese during the last 5 minutes and bake until melted and bubbly.
- Garnish with fresh herbs and serve hot!
