Ingredients

  • 2½ lbs (1.2 kg) lamb shoulder or neck, trimmed and cut into chunks
  • 2 tablespoons vegetable oil
  • 2 onions, thinly sliced
  • 3 carrots, sliced
  • 2 tablespoons flour
  • 2 cups (500 ml) beef or lamb stock
  • 2 teaspoons Worcestershire sauce (optional, for richness)
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried)
  • 2 bay leaves
  • 2 lbs (900 g) potatoes, peeled and thinly sliced
  • 2 tablespoons butter, melted
  • Salt & freshly ground black pepper, to taste
