1. Prepare the Potatoes
- Grate the potatoes using the large holes of a grater.
- Squeeze out as much water as possible using your hands or a clean towel.
2. Mix the Batter
In a bowl, add:
β grated potatoes
β onion
β eggs
β flour
β parsley
β salt, pepper, and garlic powder
Mix until everything holds together.
Tip: If the mixture looks too wet, add a little more flour.
3. Fry
- Heat a thin layer of oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten slightly.
- Fry for 3β4 minutes per side, until golden and crispy.
- Transfer to paper towels to drain.

- Sour cream or Greek yogurt
- Garlic mayo
- Ranch
- Ketchup
- A squeeze of lemon (so good!)
β Extra Tips
- Add shredded cheese to make them extra flavorful.
- For a spicy version, add paprika or chili flakes.
- You can also bake them at 425Β°F (220Β°C) for 20β25 minutes if you prefer less oil.
