1๏ธโฃ Peel and cut the potatoes
Cut into classic fry shapes or thin sticks.
2๏ธโฃ Rinse + soak
Rinse the fries under cold water, then soak 20โ30 minutes to remove extra starch.
(This makes them super crispy!)
3๏ธโฃ Dry well
Pat the potatoes dry completely with a towel.
4๏ธโฃ Mix with cornstarch
Add 1 tbsp cornstarch and toss to coat.
This gives them that perfect crunch.
5๏ธโฃ First fry (low heat)
Fry in medium-hot oil (300ยฐF / 150ยฐC) for 3โ4 minutes.
They should soften but NOT brown yet.
Remove and let rest 10 minutes.
6๏ธโฃ Second fry (high heat)
Increase heat to 375ยฐF / 190ยฐC.
Fry again until golden and crispy.
7๏ธโฃ Season
Immediately sprinkle with salt and your favorite spices.
