
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil or butter
- Salt and pepper, to taste
- 1 tsp dried oregano
- ½ tsp paprika (optional)
- ½ tsp garlic powder
For the Creamy Mushroom Sauce:
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 3–4 garlic cloves, minced
- 8 oz (225 g) mushrooms, sliced (cremini or white)
- ½ cup sun-dried tomatoes, chopped (oil-packed is best; drain before using)
- ¼ cup white wine (optional) or chicken broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tsp dried basil or Italian seasoning
- A handful of fresh spinach or chopped kale (optional)
To Serve (optional):
- Fresh parsley or basil, chopped
- Crusty bread, pasta, rice, or mashed potatoes
