🍗 Mediterranean Chicken Breast in Creamy Mushroom Sauce

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tsp dried oregano
  • ½ tsp paprika (optional)
  • ½ tsp garlic powder

For the Creamy Mushroom Sauce:

  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 3–4 garlic cloves, minced
  • 8 oz (225 g) mushrooms, sliced (cremini or white)
  • ½ cup sun-dried tomatoes, chopped (oil-packed is best; drain before using)
  • ¼ cup white wine (optional) or chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried basil or Italian seasoning
  • A handful of fresh spinach or chopped kale (optional)

To Serve (optional):

  • Fresh parsley or basil, chopped
  • Crusty bread, pasta, rice, or mashed potatoes
