🔄 Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare cake batter according to the instructions on the strawberry cake mix box. Pour the batter into the prepared pan.
- Sprinkle the add-ins evenly over the top of the cake batter:
- Chopped strawberries
- White chocolate chips
- Shredded coconut
- Chopped nuts (if using)
- Make the cream cheese swirl:
In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Spoon dollops of the cream cheese mixture over the top of the cake. Use a butter knife to gently swirl it into the batter — don’t overmix, just swirl!
- Bake for 40–45 minutes, or until the center is set and a toothpick comes out mostly clean (a little gooey is okay — it’s an earthquake cake!).
- Cool slightly before serving. This cake is delicious warm or chilled!
💡 Tips:
- If using frozen strawberries, thaw and drain them first to avoid excess moisture.
- Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence!
