🍓 Strawberry Earthquake Cake Recipe

🔄 Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare cake batter according to the instructions on the strawberry cake mix box. Pour the batter into the prepared pan.
  3. Sprinkle the add-ins evenly over the top of the cake batter:
    • Chopped strawberries
    • White chocolate chips
    • Shredded coconut
    • Chopped nuts (if using)
  4. Make the cream cheese swirl:
    In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spoon dollops of the cream cheese mixture over the top of the cake. Use a butter knife to gently swirl it into the batter — don’t overmix, just swirl!
  6. Bake for 40–45 minutes, or until the center is set and a toothpick comes out mostly clean (a little gooey is okay — it’s an earthquake cake!).
  7. Cool slightly before serving. This cake is delicious warm or chilled!

💡 Tips:

  • If using frozen strawberries, thaw and drain them first to avoid excess moisture.
  • Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence!
