👩‍🍳 Instructions

1. Make the batter

  • In a bowl, whisk eggs, milk, sparkling water, sugar (if using), and salt.
  • Gradually add flour, whisking until smooth and lump-free.
  • Let the batter rest for 15–20 minutes.

2. Cook the pancakes

  • Heat a lightly oiled non-stick pan over medium heat.
  • Pour a small amount of batter and swirl to coat the pan thinly.
  • Cook for about 1–2 minutes, then flip and cook the other side.

3. Stack & keep warm

  • Stack cooked pancakes on a plate and cover to keep warm.
