🇭🇺 Hungarian String Bean Dill Soup (Sárga & Zöld Bableves)


👩‍🍳 Instructions:

  1. Cook the beans:
    Place string beans in a pot with water or broth. Add a pinch of salt and cook for about 15–20 minutes until tender.

  1. Prepare base:
    In a separate pan, heat oil or butter and sauté onion until soft. Add garlic and cook briefly.
  2. Remove from heat and stir in paprika, then add flour and mix well.

  1. Combine:
    Slowly add some of the hot bean cooking liquid to the onion mixture, stirring until smooth.
  2. Pour this back into the pot with the beans.

  1. Season & finish:
    Add dill, salt, pepper, and a little sugar if desired.
  2. Stir in sour cream and simmer gently for a few minutes (do not boil).
  3. Add vinegar or lemon juice for a slightly tangy flavor.
