1. Make the Batter
- In a bowl, whisk eggs, milk, sparkling water, sugar (if using), salt, and vanilla.
- Gradually add flour, whisking until smooth and lump-free.
- Let batter rest for 15–20 minutes.
👉 The batter should be thin—similar to heavy cream.
2. Cook the Crepes
- Heat a non-stick pan over medium heat and lightly grease it.
- Pour a small ladle of batter and swirl to coat the pan thinly.
- Cook for 1–2 minutes until edges lift slightly.
- Flip and cook another 30–60 seconds.
- Repeat with remaining batter.
3. Fill & Roll
