👩‍🍳 Instructions

1. Make the Batter

  1. In a bowl, whisk eggs, milk, sparkling water, sugar (if using), salt, and vanilla.
  2. Gradually add flour, whisking until smooth and lump-free.
  3. Let batter rest for 15–20 minutes.

👉 The batter should be thin—similar to heavy cream.


2. Cook the Crepes

  1. Heat a non-stick pan over medium heat and lightly grease it.
  2. Pour a small ladle of batter and swirl to coat the pan thinly.
  3. Cook for 1–2 minutes until edges lift slightly.
  4. Flip and cook another 30–60 seconds.
  5. Repeat with remaining batter.

3. Fill & Roll
