- Preheat oven to 180°C (350°F). Grease and line a cake pan.
- In a bowl, beat the egg yolks with sugar and vanilla until pale and creamy.
- Stir in the ground hazelnuts and lemon zest (if using).
- In a separate bowl, beat egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the hazelnut mixture.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes, or until set and lightly golden.
- Let cool completely before removing from the pan. Dust with powdered sugar before serving.
