👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F). Grease and line a cake pan.
  2. In a bowl, beat the egg yolks with sugar and vanilla until pale and creamy.
  3. Stir in the ground hazelnuts and lemon zest (if using).
  4. In a separate bowl, beat egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the hazelnut mixture.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until set and lightly golden.
  8. Let cool completely before removing from the pan. Dust with powdered sugar before serving.
