👩‍🍳 Instructions:

  1. Prepare batter:
    Beat egg yolks with half the sugar and vanilla until creamy.
  2. In another bowl, beat egg whites with salt, then gradually add remaining sugar and beat until stiff peaks form.
  3. Gently fold egg whites into yolks, then fold in flour.

  1. Bake layers:
    Divide batter into 5–6 thin layers and bake each at 180°C (350°F) for 6–8 minutes until lightly golden. Let cool.

  1. Make buttercream:
    Beat butter with powdered sugar until fluffy.
  2. Add melted chocolate and vanilla, mix until smooth.

  1. Assemble cake:
    Layer sponge sheets with chocolate buttercream and stack evenly.
  2. Cover sides with remaining cream.

  1. Caramel topping:
    Melt sugar until golden.
  2. Pour onto the top layer and spread quickly.
  3. Score into slices before it hardens.

  • Work fast with caramel
  • Chill before slicing
  • Use a warm knife for clean cuts
