1️⃣ Bake the Cake:
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch pans.
- Cream butter + sugar until fluffy.
- Add eggs one at a time, then vanilla.
- Whisk flour, cocoa, baking soda, baking powder, salt.
- Add dry ingredients alternately with buttermilk, mixing gently.
- Stir in boiling water until smooth (batter will be thin — perfect!).
- Divide evenly into pans and bake 25–30 minutes.
- Cool completely before frosting.
2️⃣ Make Coconut-Pecan Frosting:
- In a saucepan, combine evaporated milk, yolks, sugar, butter.
- Cook over medium stirring constantly about 10–12 min until thickened.
- Remove from heat — stir in coconut, pecans, vanilla.
- Let cool until spreadable.
3️⃣ Assemble:
- Place first cake layer → spread a thick layer of coconut-pecan frosting.
- Repeat with all layers.
- Frost outside with chocolate buttercream (optional but beautiful!).
- Add remaining coconut-pecan frosting on top.
