- Mix in the vanilla extract.
- Add the flour and salt, stirring until just combined. Fold in the chopped pecans.
- Scoop dough and roll into 1-inch balls. Place on prepared baking sheet.
- Bake for 12–15 minutes, or until the bottoms are lightly golden (tops should remain pale).
- Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.
- Once completely cooled, roll them in powdered sugar again for a thick, snowy coating.
