1. Make the dough:

  1. In a small bowl, dissolve yeast in the warm milk and let it sit for 5–10 minutes until frothy.
  2. In a large bowl, mix flour, sugar, and salt. Cut in butter until crumbly.
  3. Add the egg and the yeast mixture. Knead until a soft dough forms.
  4. Divide into 4 equal portions. Wrap and chill for 30 minutes in the fridge.

2. Prepare the filling:

  • Mix ground walnuts with sugar and vanilla sugar.

3. Assemble the layers:

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment.
  2. Roll out one dough piece to fit the pan. Place it on the bottom.
  3. Spread with 1/3 of the apricot jam, then sprinkle 1/3 of the walnut mixture.
  4. Repeat with the next two dough layers and fillings.
  5. Finish with the final (4th) dough layer on top — no filling on this one.

4. Bake:

  • Prick the top layer with a fork.
  • Bake for 35–40 minutes, until golden. Cool completely in the pan.

5. Make the chocolate glaze:

  1. Melt chocolate and butter/oil together until smooth.
  2. Pour over the cooled cake and spread evenly.
  3. Let set completely (refrigerate for quicker setting).

6. Slice and serve:

  • Use a hot knife to slice into neat squares or diamonds.
  • Store in an airtight container — tastes even better after a day or two!
