Ingredients (for a 9×13 inch / 23×33 cm pan):

  • 4 cups (500 g) all-purpose flour
  • ½ cup (100 g) sugar
  • 1 packet (7 g) instant yeast
  • 1 cup (225 g) unsalted butter, cold and cubed
  • 2 egg yolks
  • ½ cup (120 ml) warm milk
  • Pinch of salt

For the filling:

  • 1 ½ cups (150 g) ground walnuts
  • 1 cup (200 g) sugar
  • 1 ½ cups (350 g) apricot jam (good quality, slightly tart)

For the chocolate glaze:

  • 4 oz (120 g) dark chocolate
  • 2 tbsp butter or oil
