1. Prepare the Mashed Potatoes:
- Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
- Bring to a boil and cook until potatoes are fork-tender (about 15–20 minutes).
- Drain the potatoes and return them to the warm pot.
- Add butter, warm milk or cream, and sour cream. Mash until smooth and creamy. Season with salt and pepper.
- Cover to keep warm while you prepare the beef and gravy.
2. Cook the Ground Beef and Make the Gravy:
- In a large skillet, melt butter over medium heat. Add chopped onion and cook until softened and golden, about 5–7 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add the ground beef and break it up with a spoon. Cook until browned and cooked through (about 8 minutes). Drain excess fat if necessary.
- Sprinkle flour over the beef mixture and stir it in well, cooking for 1–2 minutes to remove the raw flour taste.
- Slowly pour in beef broth while stirring constantly to prevent lumps.
- Stir in Worcestershire sauce, soy sauce, paprika, thyme, and pepper. Bring to a gentle simmer.
- Reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally, until the gravy thickens.
- (Optional) Stir in heavy cream for extra richness.
- Taste and adjust seasoning with salt and more Worcestershire if needed.
🍽️ Assemble and Serve:
- Scoop a generous portion of mashed potatoes onto each plate or bowl.
- Spoon the hot beef and gravy mixture generously over the potatoes.
- Garnish with freshly chopped parsley or green onions.
