Crust

- 16 oz (450 g) cream cheese, softened
- ¾ cup sugar
- 8 oz (225 g) white chocolate, melted & slightly cooled
- 3 large eggs
- 1 cup heavy cream or sour cream
- 1 tsp vanilla extract
- Pinch of salt
Strawberry Topping
- 2 cups fresh or frozen strawberries, sliced
- ½ cup sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon juice
👩🍳 Instructions
1️⃣ Crust
- Preheat oven to 350°F (180°C).
- Mix crumbs, sugar, and melted butter.
- Press into the bottom of a 9-inch springform pan.
- Bake 10 minutes, then cool.
2️⃣ Cheesecake Filling
- Reduce oven to 325°F (165°C).
- Beat cream cheese and sugar until smooth.
- Add melted white chocolate and vanilla.
- Add eggs one at a time, mixing gently.
- Stir in cream and salt.
- Pour over crust.
3️⃣ Bake
- Bake 55–60 minutes until edges are set and center slightly jiggly.
- Turn oven off, crack door, cool 1 hour.
- Refrigerate 4 hours or overnight.
4️⃣ Strawberry Topping
- Cook strawberries, sugar, cornstarch, water, and lemon juice over medium heat until thick.
- Cool completely, then spread over cheesecake.
