
🍓🤍 White Chocolate Strawberry Cheesecake
Ingredients
Crust
- 2 cups graham cracker crumbs
- ½ cup melted butter
- 2 tbsp sugar
Cheesecake Filling
- 16 oz (450 g) cream cheese, softened
- 1 cup melted white chocolate (cooled)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 large eggs
- ½ cup sour cream or heavy cream
Strawberry Topping
- 2 cups fresh strawberries, sliced
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
Instructions
- Preheat oven to 325°F (165°C). Grease a springform pan.
- Mix crust ingredients, press into pan, and bake 10 minutes. Cool.
- Beat cream cheese until smooth. Add white chocolate, sugar, and vanilla.
- Beat in eggs one at a time. Mix in sour cream.
- Pour filling over crust.
- Bake 45–55 minutes until center is just set. Cool completely.
- For topping, cook strawberries, sugar, lemon juice, and cornstarch mixture until thick. Cool.
- Spoon topping over cheesecake. Chill 4 hours before serving.
