White Chocolate Strawberry Cheesecake

Instructions

1. Make the crust

  1. Mix crumbs + melted butter.
  2. Press into bottom of a springform pan.
  3. Chill while you prepare filling.

2. Make the filling

  1. Beat cream cheese + powdered sugar + vanilla until smooth.
  2. Add melted white chocolate; mix well.
  3. Fold in whipped heavy cream gently.
  4. Spread over crust.
  5. Chill 4 hours or overnight.

3. Make strawberry topping

  1. Add strawberries + sugar + lemon to a pan.
  2. Cook 3–5 minutes until juicy.
  3. (Optional) Add cornstarch slurry to thicken.
  4. Cool completely.
  5. Pour over chilled cheesecake.

4. Serve

Slice and enjoy cold.
