
🌰 Walnut Roll (Diós Bejgli)
Ingredients (Dough)
- 500 g all-purpose flour
- 200 g butter (cold, cubed)
- 80 g powdered sugar
- 2 egg yolks
- 150 ml sour cream
- 1 pinch salt
- Zest of 1 lemon
Walnut Filling
- 300 g ground walnuts
- 150 g sugar
- 100 ml milk
- Zest of 1 lemon
- 1 tsp vanilla
- Optional: raisins
For Brushing
- 1 egg yolk
- 1 egg white
Instructions
- Dough
Rub butter into flour. Add sugar, salt, zest, yolks, and sour cream.
Knead just until combined. Divide into 2 logs. Chill 1 hour. - Filling
Heat milk with sugar until dissolved. Pour over walnuts.
Add lemon zest, vanilla, and raisins if using. Cool completely. - Assemble
Roll dough into rectangles. Spread filling evenly, leaving edges clear.
Roll tightly and seal ends. - Glazing (important for crackle look)
Brush with egg yolk. Chill 15 min.
Brush with egg white. Chill again 15 min.
Prick gently with a fork. - Bake
Bake at 180°C (350°F) for 35–40 minutes until golden.
Cool completely before slicing.
