🌰 Walnut Roll (Diós Bejgli)

Ingredients (Dough)

  • 500 g all-purpose flour
  • 200 g butter (cold, cubed)
  • 80 g powdered sugar
  • 2 egg yolks
  • 150 ml sour cream
  • 1 pinch salt
  • Zest of 1 lemon

Walnut Filling

  • 300 g ground walnuts
  • 150 g sugar
  • 100 ml milk
  • Zest of 1 lemon
  • 1 tsp vanilla
  • Optional: raisins

For Brushing

  • 1 egg yolk
  • 1 egg white

Instructions

  1. Dough
    Rub butter into flour. Add sugar, salt, zest, yolks, and sour cream.
    Knead just until combined. Divide into 2 logs. Chill 1 hour.
  2. Filling
    Heat milk with sugar until dissolved. Pour over walnuts.
    Add lemon zest, vanilla, and raisins if using. Cool completely.
  3. Assemble
    Roll dough into rectangles. Spread filling evenly, leaving edges clear.
    Roll tightly and seal ends.
  4. Glazing (important for crackle look)
    Brush with egg yolk. Chill 15 min.
    Brush with egg white. Chill again 15 min.
    Prick gently with a fork.
  5. Bake
    Bake at 180°C (350°F) for 35–40 minutes until golden.

Cool completely before slicing.
