Vegetable Omelet Muffins for Kids

Ingredients

  • 6 large eggs
  • ¼ cup milk
  • ½ cup bell peppers, finely chopped
  • ¼ cup zucchini, finely grated
  • ¼ cup carrots, finely grated
  • 2 tbsp onion, very finely chopped
  • ¼ cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper, to taste
  • Cooking spray or oil

Instructions

  1. Preheat oven to 180°C / 350°F. Grease a muffin tin.
  2. Whisk eggs with milk, salt, and pepper.
  3. Stir in vegetables and cheese.
  4. Pour mixture evenly into muffin cups (about ¾ full).
  5. Bake 18–22 minutes until set.
  6. Cool slightly and remove from pan.
