Vanilla Kifli Cookies (Vaníliás Kifli)

Ingredients:

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely ground walnuts or almonds
  • Pinch of salt

For Coating:

  • 1 cup powdered sugar
  • 1 tsp vanilla sugar or vanilla extract (optional)

Instructions:

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream butter and powdered sugar until smooth.
  3. Mix in vanilla extract.
  4. Add flour, ground nuts, and salt. Mix until a soft dough forms.
  5. Take small portions of dough, roll into logs, and shape into crescents.
  6. Place on baking sheet and bake for 12–15 minutes, until set but not browned.
  7. While still warm, gently roll cookies in powdered sugar mixed with vanilla sugar.
  8. Cool completely before serving.
