
Vanilla Kifli Cookies (Vaníliás Kifli)
Ingredients:
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup finely ground walnuts or almonds
- Pinch of salt
For Coating:
- 1 cup powdered sugar
- 1 tsp vanilla sugar or vanilla extract (optional)
Instructions:
- Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a bowl, cream butter and powdered sugar until smooth.
- Mix in vanilla extract.
- Add flour, ground nuts, and salt. Mix until a soft dough forms.
- Take small portions of dough, roll into logs, and shape into crescents.
- Place on baking sheet and bake for 12–15 minutes, until set but not browned.
- While still warm, gently roll cookies in powdered sugar mixed with vanilla sugar.
- Cool completely before serving.
