👩🍳 Instructions
1. Make the Jalapeño Queso
- In a small saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute (this is your roux).
- Slowly whisk in milk until smooth and thickened.
- Stir in cheddar cheese, jalapeño, garlic powder, cumin, and salt.
- Keep warm over low heat until ready to use.
2. Cook the Burgers
- Mix ground beef with salt, pepper, and smoked paprika.
- Form into 4 patties, slightly larger than your buns (they shrink while cooking).
- Cook on a hot grill or skillet 3–4 minutes per side for medium, adding cheddar slices during the last minute to melt.
3. Assemble the Burgers
- Spread a little chipotle mayo on the toasted bun bottoms.
- Place the cheesy burger patties on top.
- Add 2 slices of crispy bacon per burger.
- Spoon a generous amount of jalapeño queso over the top.
- Sprinkle with crushed Doritos for that signature crunch.
- Add any extra toppings (lettuce, tomato, pickled jalapeños) and top with the bun.
🍽️ Tips & Twists
- Extra Crunch: Double coat the inside of the bun with crushed Doritos before stacking the burger.
- Heat Level: Use Pepper Jack cheese instead of cheddar for an even spicier kick.
- Over-the-Top Move: Drizzle more queso over the finished burger right before serving — messy but worth it!
Would you like me to turn this into a game-day party platter version (mini sliders with queso dipping station + Doritos on the side)? That would be epic for sharing.
