Instructions:
Step 1: Bake the Potatoes
- Preheat your oven to 400°F (200°C).
- Wash the baking potatoes thoroughly and pierce each potato several times with a fork to allow steam to escape.
- Place the potatoes directly on the oven rack and bake for 1 hour, or until they are tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool slightly.
Step 2: Prepare the Filling
- While the potatoes are cooling, prepare the filling:
- In a large mixing bowl, combine the heavy cream, softened butter, shredded cheese, garlic powder, onion powder, salt, black pepper, and paprika (if using).
- Mix everything together until smooth and creamy.
Step 3: Fill the Potatoes
- Cut the cooled potatoes in half lengthwise.
- Use a spoon to scoop out the flesh from the potato halves, leaving about 1/4 inch of potato around the edges to keep the skins intact.
- Place the scooped-out potato flesh in a large mixing bowl.
Step 4: Mash the Potatoes
- Add the prepared filling (cream, butter, cheese, etc.) to the mashed potato flesh.
- Use a potato masher or electric mixer to mash everything together until smooth and creamy. Adjust the seasoning with additional salt and pepper if needed.
Step 5: Stuff the Potato Skins
- Spoon the mashed potato mixture back into the hollowed-out potato skins. Pack it tightly so that the potatoes are full.
- Sprinkle additional shredded cheese over the top of each stuffed potato.
Step 6: Bake Again
- Place the stuffed potatoes on a baking sheet or in a baking dish.
- Bake in the preheated oven at 400°F (200°C) for 20-25 minutes, or until the cheese is melted and golden brown on top.
Step 7: Serve
- Remove the potatoes from the oven and let them cool for a few minutes.
- Garnish with fresh parsley for added color and flavor.
- Serve hot as a side dish or main course.
Tips:
- Cheese Variety: You can use different types of cheese, such as Gruyère, Swiss, or Monterey Jack, depending on your preference.
- Add-Ins: For extra flavor, you can add ingredients like crumbled bacon, sautéed onions, or diced ham to the filling.
- Storage: Leftover twice-baked potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
Enjoy your delicious Twice-Baked Potatoes! 😊
