Torta della Nonna is a traditional Tuscan dessert featuring a buttery shortcrust pastry filled with rich pastry cream and topped with toasted pine nuts. Its name means “Grandmother’s Cake,” and it’s a beloved classic in Italian cuisine.
Ingredients
For the Pastry (Pasta Frolla):
- 2 ½ cups (300g) all-purpose flour
- ⅔ cup (150g) cold butter, cubed
- ½ cup (120g) sugar
- 1 whole egg + 1 egg yolk
- 1 teaspoon vanilla extract or lemon zest
- A pinch of salt
For the Pastry Cream:
- 2 cups (500ml) whole milk
- 4 egg yolks
- ½ cup (100g) sugar
- ⅓ cup (40g) cornstarch
