
Instructions
- Mix butter and powdered sugar until creamy.
- Add egg yolks, vanilla, and lemon zest.
- Add flour and mix to form a soft dough.
- Wrap and refrigerate 30 minutes.
- Roll dough to about 3–4 mm thickness.
- Cut cookies; cut a small hole in the center of half of them.
- Bake at 180°C (350°F) for 10–12 minutes.
- Spread apricot jam on the bottom cookies and place the cut cookies on top.
- Dust with powdered sugar and drizzle with melted chocolate.
