🥄 Instructions
Step 1: Make the Dough
- In a large bowl, combine the flour, powdered sugar, and salt.
- Cut in the butter until the mixture is crumbly.
- Add the egg, vanilla, and enough white wine to form a soft but non-sticky dough.
- Knead gently, wrap in plastic, and chill for at least 1 hour.
Step 2: Prepare the Fillings
- Poppy Seed: Simmer poppy seeds, milk, sugar, and lemon zest until thickened.
- Walnut: Simmer walnuts, milk, sugar, and orange zest until thick and spreadable.
- Apple: Sauté grated apples with sugar and cinnamon until juices evaporate and the mixture is soft.
Cool all fillings before assembling.
Step 3: Assemble the Flódni
- Preheat your oven to 350°F (175°C).
- Grease and line a 9×9 inch (or 8×8 inch) square pan.
- Divide dough into 5 portions: 4 layers plus a top layer.
- Roll out the first dough portion and place it in the bottom of the pan.
- Spread poppy seed filling evenly.
- Roll out the second dough layer and place it over the poppy seed.
- Spread walnut filling evenly.
- Roll out the third dough layer and place it over the walnut.
- Spread apple filling evenly.
- Roll out the fourth dough layer and place it over the apples.
- Spread plum jam generously.
- Roll out the final dough piece and carefully place it on top.
- Brush the top with beaten egg for a golden finish.
Step 4: Bake
- Bake for about 50–60 minutes, until the top is deep golden and the layers have baked together beautifully.
- Cool completely, preferably overnight, before slicing (this helps the layers firm up).
🧡 Why Flódni is Special:
- Each bite is an explosion of texture: crunchy, nutty, fruity, sweet, and slightly tangy.
- Symbolic: Each filling has meaning — seeds (life), nuts (prosperity), apples (sweetness), plums (preservation).
- It’s a celebration dessert, often made for holidays like Hanukkah or Purim in the Jewish community of Budapest.
✨ Serving Tip:
- Dust lightly with powdered sugar before serving.
- Slice into small squares — Flódni is very rich!
