- Cook the potatoes
Boil the potatoes until tender, then peel and mash them while still warm. - Make the dough
Mix mashed potatoes with flour, egg, and a pinch of salt. Knead into a smooth, soft dough. - Prepare the plums
If desired, fill the cavity of each plum with a teaspoon of sugar. - Form the dumplings
Take a portion of dough, flatten it in your hand, place a plum inside, and wrap the dough around it. Seal tightly. - Boil the dumplings
Bring a large pot of salted water to a boil. Drop the dumplings in, simmer gently for 8–10 minutes, until they float. - Prepare the topping
Toast the breadcrumbs in butter until golden. - Serve
Roll the cooked dumplings in the buttery breadcrumbs and sprinkle with cinnamon sugar if you like. Serve warm.
