
Instructions
- Preheat oven: Preheat to 350°F (175°C). Place pie crust in a 9-inch pie dish.
- Prepare sweet potatoes: If not already cooked, bake or boil sweet potatoes until soft. Peel and mash until smooth.
- Make the filling:
- In a large bowl, beat butter and sugars until creamy.
- Add mashed sweet potatoes, milk, eggs, vanilla, and spices. Mix until smooth and well combined.
- Assemble and bake:
- Pour filling into prepared pie crust. Smooth the top with a spatula.
- Bake for 50–60 minutes, or until the center is set (slightly jiggly is fine; it will firm up as it cools).
- Cool and serve:
- Let pie cool completely at room temperature, then refrigerate for at least 2 hours.
- Top with whipped cream before serving, if desired.
