
Instructions:
- Prepare the Stuffing:
- In a pan, heat 2 tablespoons of olive oil.
- Add the chopped onion and sauté until it becomes transparent.
- Add the minced garlic, chopped tomatoes, and bell pepper (if using), and stir until the vegetables soften.
- Add the washed rice and stir until it absorbs the oil.
- Add half a cup of chicken broth or water, and let the mixture simmer until the liquid is absorbed. Then add cumin, paprika, salt, and pepper.
- Let the mixture cool slightly, then stir in the chopped parsley and mozzarella cheese (optional).
- Stuff the Calamari:
- Stuff each calamari with the rice mixture, but don’t overfill as the rice will expand while cooking.
- Close the ends of the calamari using wooden skewers or cooking thread.
- Bake in the Oven:
- Preheat the oven to 180°C (350°F).
- Place the stuffed calamari in a baking dish in a single layer.
- Drizzle lemon juice over the calamari.
- Add the chicken broth or water around the calamari in the dish.
- Cover the dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for another 10-15 minutes to allow the calamari to brown slightly.
- Serve:
- Serve the stuffed calamari on a platter with lemon slices and your favorite side vegetables.
