Stuffed Calamari in the Oven

Instructions:

  1. Prepare the Stuffing:
    • In a pan, heat 2 tablespoons of olive oil.
    • Add the chopped onion and sauté until it becomes transparent.
    • Add the minced garlic, chopped tomatoes, and bell pepper (if using), and stir until the vegetables soften.
    • Add the washed rice and stir until it absorbs the oil.
    • Add half a cup of chicken broth or water, and let the mixture simmer until the liquid is absorbed. Then add cumin, paprika, salt, and pepper.
    • Let the mixture cool slightly, then stir in the chopped parsley and mozzarella cheese (optional).
  2. Stuff the Calamari:
    • Stuff each calamari with the rice mixture, but don’t overfill as the rice will expand while cooking.
    • Close the ends of the calamari using wooden skewers or cooking thread.
  3. Bake in the Oven:
    • Preheat the oven to 180°C (350°F).
    • Place the stuffed calamari in a baking dish in a single layer.
    • Drizzle lemon juice over the calamari.
    • Add the chicken broth or water around the calamari in the dish.
    • Cover the dish with aluminum foil and bake for 30 minutes.
    • After 30 minutes, remove the foil and bake for another 10-15 minutes to allow the calamari to brown slightly.
  4. Serve:
    • Serve the stuffed calamari on a platter with lemon slices and your favorite side vegetables.
