Instructions
- Cook the bacon (if using):
In a large skillet or cast-iron pan, cook chopped bacon over medium heat until crispy.
Remove bacon and set aside, leaving about 1 tablespoon of drippings in the pan. - Brown the sausage:
Add sliced smoked sausage to the skillet.
Cook 4–5 minutes, until browned on both sides. Remove and set aside with the bacon. - Sauté onions and garlic:
Add butter to the skillet along with the chopped onion.
Cook 3–4 minutes until translucent, then stir in the minced garlic for another 30 seconds. - Add the cabbage:
Stir in the chopped cabbage, smoked paprika, salt, pepper, and red pepper flakes.
Mix well to coat everything in those smoky flavors. - Cook it down:
Cover and cook on medium heat for about 10–12 minutes, stirring occasionally, until the cabbage softens and starts to caramelize. - Combine everything:
Add back the sausage (and bacon if using).
Drizzle in apple cider vinegar and stir everything together.
Cook uncovered for another 3–5 minutes, until it’s glossy and tender. - Serve hot:
Sprinkle with a little extra black pepper or parsley if desired.
💡 Tips
- Serve it with cornbread, fried potatoes, or over white rice for a complete Southern meal.
- For a spicier version, add Cajun seasoning or a splash of hot sauce.
- You can also toss in a handful of diced bell peppers for extra color and flavor.
