Ingredients

For the sponge cake (you can use 2–3 different sponge layers):

  • 6 eggs
  • 150 g (¾ cup) sugar
  • 120 g (1 cup) flour
  • 1 teaspoon baking powder

(Optional: divide batter and add cocoa to half for chocolate layer)


For the vanilla custard:

  • 500 ml (2 cups) milk
  • 3 egg yolks
  • 80 g (⅓ cup) sugar
  • 1 tablespoon flour or cornstarch
  • 1 teaspoon vanilla

Other ingredients:

  • 100 g (¾ cup) ground walnuts
  • 80 g (½ cup) raisins (soaked in rum)
  • 200 ml (¾ cup) rum or simple syrup
  • 200 ml (¾ cup) heavy cream (whipped)

Chocolate sauce:

  • 150 g (5 oz) dark chocolate
  • 200 ml (¾ cup) cream

Instructions

1️⃣ Bake sponge cake at 180°C (350°F) for 20–25 minutes. Cool and cut into cubes.

2️⃣ Make custard: heat milk. Whisk yolks, sugar, flour. Add hot milk slowly. Cook until thick. Cool.

3️⃣ Layer in a dish:

  • Sponge cubes
  • Sprinkle rum or syrup
  • Custard
  • Ground walnuts
  • Raisins

Repeat layers.

4️⃣ Top with whipped cream.

5️⃣ Make chocolate sauce: heat cream, add chocolate, stir until smooth. Cool slightly.

Serve in scoops and pour chocolate sauce on top.
