
🧁 Soft & Fluffy Homemade Vanilla Muffins
(Just like in the photo – tall, golden, bakery-style)
Ingredients
- 2 large eggs
- ¾ cup sugar
- ½ cup milk or plain yogurt
- ½ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
- In a bowl, whisk eggs and sugar until light.
- Add milk (or yogurt), oil, and vanilla. Mix well.
- Add flour, baking powder, and salt. Mix just until smooth (don’t overmix).
- Fill muffin cups ¾ full.
- Bake 18–22 minutes until golden and a toothpick comes out clean.
- Cool slightly and enjoy.
Tips for Tall Muffins
- Batter should be thick
- Don’t overmix
- Bake immediately after mixing
