- Prepare the Patties
- In a large bowl, mix ground beef, Cajun seasoning, garlic, onion, smoked paprika, salt, and pepper.
- Form into 4–6 burger patties, pressing slightly thinner in the center so they cook evenly.
- Smoke the Burgers
- Preheat smoker or grill to 225°F (110°C) with wood chips (hickory, oak, or mesquite work great).
- Place patties on the smoker and cook until they reach an internal temp of about 120–125°F (rare to medium-rare stage), around 30–45 minutes.
- Sear and Melt the Cheese
- Heat a cast-iron skillet or grill to high.
- Sear burgers 1–2 minutes per side for a smoky crust.
- Place cheese slices on top and cover until melted.
- Assemble
- Spread Cajun mayo on toasted buns.
- Add lettuce, tomato, burger patty with melted cheese, and any other toppings.
- Serve hot with fries, onion rings, or Cajun-spiced potato wedges.
