
Instructions:
- Mash the Bananas
- In a medium bowl, mash bananas with a fork until mostly smooth (a few small chunks are fine).
- Add Wet Ingredients
- Whisk in egg, sugar, and vanilla until well combined.
- Add Dry Ingredients
- Add flour, baking powder, salt, and cinnamon.
- Stir until just combined — don’t overmix. The batter should be thick but spoonable.
- Fry the Fritters
- Heat a thin layer of oil in a skillet over medium heat.
- Drop spoonfuls of batter into the pan (about 2 tbsp each).
- Flatten slightly and cook for 2–3 minutes per side, until golden brown.
- Serve Warm
- Drain on paper towels.
- Dust with powdered sugar, drizzle with honey, or serve with a scoop of yogurt or ice cream.
💡 Tips:
- Add shredded coconut, chopped nuts, or chocolate chips for extra flair.
- To make it healthier, pan-fry with just a touch of oil or cook on a non-stick griddle.
