Skillet Banana Fritters

Instructions:

  1. Mash the Bananas
    • In a medium bowl, mash bananas with a fork until mostly smooth (a few small chunks are fine).
  2. Add Wet Ingredients
    • Whisk in egg, sugar, and vanilla until well combined.
  3. Add Dry Ingredients
    • Add flour, baking powder, salt, and cinnamon.
    • Stir until just combined — don’t overmix. The batter should be thick but spoonable.
  4. Fry the Fritters
    • Heat a thin layer of oil in a skillet over medium heat.
    • Drop spoonfuls of batter into the pan (about 2 tbsp each).
    • Flatten slightly and cook for 2–3 minutes per side, until golden brown.
  5. Serve Warm
    • Drain on paper towels.
    • Dust with powdered sugar, drizzle with honey, or serve with a scoop of yogurt or ice cream.

  • Add shredded coconut, chopped nuts, or chocolate chips for extra flair.
  • To make it healthier, pan-fry with just a touch of oil or cook on a non-stick griddle.
