1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
1 tsp sugar
½ tsp black pepper
2 tbsp vegetable oil
1 large onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 cloves garlic, minced
½ cup beef broth or water
Instructions
Marinate beef: In a bowl, combine sliced beef, 1 tbsp soy sauce, ½ tsp black pepper, and 1 tsp cornstarch. Let sit 10–15 minutes.
Cook vegetables: Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Stir-fry onions and bell peppers 2–3 minutes until slightly tender. Remove and set aside.
Cook beef: Heat remaining oil in the skillet. Stir-fry beef 2–3 minutes until browned but not fully cooked.
Combine: Return vegetables to the skillet. Add garlic, remaining soy sauce, oyster sauce, sugar, beef broth, and 1 tsp cornstarch (mixed with a little water to thicken).
Sauté: Stir-fry 2–3 minutes until sauce thickens and beef is cooked through.
