Instructions:

  1. Cook the Pasta:
    • Cook the fettuccine or spaghetti according to package instructions. Drain and set aside, reserving a bit of pasta water.
  2. Cook the Shrimp:
    • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
    • Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes per side, until the shrimp turns pink and is fully cooked. Remove from the skillet and set aside.
  3. Prepare the Garlic Sauce:
    • In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic for 1-2 minutes until fragrant.
  4. Combine:
    • Add the cooked pasta to the skillet and toss to coat with the garlic oil. If needed, add a little pasta water to create a sauce-like consistency.
    • Add the shrimp back into the skillet and toss everything together.
  5. Serve:
    • Garnish with fresh parsley and grated Parmesan, if desired.
