
Instructions
- Brown the beef
- In a large pot or Dutch oven, cook beef, onion, and garlic until meat is browned. Drain excess fat.
- Layer veggies
- Add potatoes, carrots, and bell pepper on top of the meat.
- Add beans and tomatoes
- Stir in kidney beans, baked beans (if using), diced tomatoes, and tomato sauce.
- Season & simmer
- Add broth, paprika, oregano, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer 45–60 minutes, until potatoes and carrots are tender.
- Serve
- Remove bay leaf. Stir well and ladle into bowls.
- Delicious with crusty bread or cornbread on the side.

- Add corn or peas for extra sweetness.
- Use sweet potatoes instead of regular for a twist.
- For a spicy kick, add chili powder or hot sauce.
