Shipwreck Stew


Instructions

  1. Brown the beef
    • In a large pot or Dutch oven, cook beef, onion, and garlic until meat is browned. Drain excess fat.
  2. Layer veggies
    • Add potatoes, carrots, and bell pepper on top of the meat.
  3. Add beans and tomatoes
    • Stir in kidney beans, baked beans (if using), diced tomatoes, and tomato sauce.
  4. Season & simmer
    • Add broth, paprika, oregano, bay leaf, salt, and pepper.
    • Bring to a boil, then reduce heat to low. Cover and simmer 45–60 minutes, until potatoes and carrots are tender.
  5. Serve
    • Remove bay leaf. Stir well and ladle into bowls.
    • Delicious with crusty bread or cornbread on the side.

Variations:

  • Add corn or peas for extra sweetness.
  • Use sweet potatoes instead of regular for a twist.
  • For a spicy kick, add chili powder or hot sauce.
